The Williams Sonoma Test Kitchen chefs love mixing up spritzes all year long, using whatever fruit is abundant to accent the flavour of this classic sparkling wine cocktail. This summertime version features a winning duo of fresh watermelon and lime juices, plus ginger syrup and a splash of gin for added sweetness and herbal notes. If you plan on hosting guests for cocktail hour, consider making a double batch of the watermelon juice ahead of time so you can mix up spritzes in a flash whenever it’s time for another round. For a lower-ABV version of this drink, simply omit the sparkling wine and use 160 ml of sparkling water.
Ingredients
- 1 cup (125 g) cubed seedless watermelon
- Kosher salt and freshly ground pepper
- 1 1/2 cups (3 oz./90 g) fresh bread crumbs
- 1/4 cup (1/3 oz./10 g) chopped fresh flat-leaf parsley
- 2 Tbs. chopped fresh mint
- 1 Tbs. chopped fresh rosemary
- 2 Tbs. Dijon mustard
- 2 Tbs. olive oil
Directions:
- First, make the watermelon juice. Put the watermelon cubes in a food processor or blender and puree until smooth. Place a wire mesh strainer over a small bowl and strain the juice out of the watermelon, using a spoon or a spatula if needed. Set aside.
- Place a large ice cube or sphere in a wine glass. Set aside.
- In a mixing glass or cocktail shaker, combine 90 ml of the watermelon juice with the lime juice, ginger syrup, gin and pinch of salt. Stir to combine. Pour into the prepared glass and top with the sparkling wine and water.
- Garnish with a watermelon wedge and mint sprigs, if desired, and serve. Makes 1 drink.
